Could anybody please explain to me what specificially drive mode does? So far I've figured out that when turned on you can access the VR system by either the side button or flipping open the phone (despite setting up the phone to not access the VR system upon flip open)

That is the big thing, it announces who is calling if the number is recognized, that gives you the option of just ignoring the call without having to pick the phone up and look at it. If you phone is open and you receive a call in driving mode, it asks if you want to connect. You tell it yes, and it answers the call.
